Take it Easy
If there’s one thing this busy mom right here doesn’t have enough time for – it’s remembering to make myself something nutritious to eat. I get so overworked (and quite frankly: overwhelmed too) making sure the kids have everything they need that I often forget to feed myself. I hate to admit how often since the beginning of the school year just how many of my meals have consisted of leftover kids sandwich crusts and goldfish crackers. It’s about time that after 15 years of parenting that I get better at preparing easy, delicious and healthy chicken recipes fit for an adult to eat. I vow to take it easy and make it healthy from now on.
Take it Fast
Promising to make myself easy and nutritious meals is one thing, but actually doing it is another. But with just a few healthy ingredients it’s surprisingly easy for those of us that are seeking to make easy and healthier food options. I am all about packing in nutritious meals full of fiber and protein. I know that the best meals are those that sustain me the longest (hence not having to eat again an hour later).
Make it: Southwest Salad Recipe
Ingredients:
Chopped Roman Lettuce
1/4 Cup black beans
1 Chopped Roma Tomato
1/4 Sliced Avocado
1/8 Cup Roasted Corn
Tortilla Chips or Strips
Shredded Cheese (Light)
Last Night’s Left Over Barbecued Chicken Shredded
Your Favorite Dressing (Light)
Directions:
The glory of this recipe, if you can even call it a recipe is that it requires only prep and no cooking (because what green salad requires cooking anyway?). Chop the vegetables, place the lettuce in the bowl or Tupperware first and then lay on your toppings. If you don’t have any chicken leftover from last night’s dinner, then leave it out of the recipe. Also, I opted for a Avocado/Poblano creamy dressing for this particular salad, but you could easily cut more calories and use a simple pico de gallo as a dressing as well.
Make it and Take it Delicious
Anyone that knows me knows that I am a huge, huge fan of salads. If given the opportunity, I would eat a salad for breakfast, lunch and dinner everyday. That’s why when given the task of preparing healthy meals for myself, I will create a large chopped salad and store it in the fridge. Then when I’m hungry all I have to do is quickly prep the toppings. Since I eat so many salads I mix up the toppings to keep it entertaining and delicious.
