Authentic Mexican Soup Made Easy
One of the best things about the Fall season is soups, soups and some more soups. What I love the best about soups is making them in the slow cooker, that way it takes just a few minutes in the morning to prepare and then it’s done and ready by dinner time. My husband is a huge fan of Mexican and Latin dishes, so much so in fact, there isn’t a dish he doesn’t like. I like to create easy, tasty and authentic as possible recipes to make him happy. Making authentic La Morena Mexican type soups in the slow cooker is ideal, because the slow cooking brings out rich, robust flavors as well as using authentic Mexican ingredients – therefore creating the best, most flavorful soup. We have been making this super easy slow cooker chicken tortilla soup since we started dating. It is one of our family fall favorite soups. It is easy, super tasty and very filling. Don’t let the long list of authentic ingredients intimidate you, this #VivaLaMorena chicken tortilla soup is so easy to make!
Ingredients:
2 chicken breasts
1 7oz can Sliced Jalapeno’s
1 15 ounce can whole peeled tomatoes
1 10 ounce can enchilada sauce
1 medium yellow onion, chopped
2 cloves garlic, minced
2 cups water
1 14.5 ounce can low sodium chicken broth
1 teaspoon cumin
1/8 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon fresh cracked black pepper
1 bay leaf
1 10 ounce package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil
Optional: 1 can of black beans
Directions:
Coat chicken with fresh cracked black pepper
Add all ingredients to slow cooker (aka the “pool”)
Cook on Low for 8 hours, or cook on High for 4-6 hours
That’s it! So easy right?
To Make Homemade Tortilla Strips (so easy and totally worth it!):
Coat tortillas lightly with oil
Cut into strips
Place on baking sheet and bake at 400 degree’s for 10-15 or until crisp and brown
