An UGLY Sweater Party!
Last week I had the opportunity to attend a Minute® Rice ugly sweater party along with some amazing fellow bloggers. It is always a pleasure to see some of my favorite bloggers in person and having the opportunity to show my dorky flare for Christmas made the event even more fun.
During the ugly sweater party we had the opportunity to taste several dishes with a variety of Minute® rice ingredients and it was a blast. My favorite dish of the party was the delicious banana bread made with Minute® Multi-Grain Medley – who knew rice was so tasty in homemade bread? After such a wonderful morning with blogging friends I was totally excited to come home and create my favorite fried rice dish with the newest product from Minute® Rice, the Minute® Multi-Grain Medley. It’s a gorgeous blend of four gluten-free, 100% whole grains, including long grain brown rice, Thai red rice, wild rice and quinoa and it conveniently cooks in 10 minutes. Shrimp Fried Rice
Ingredients:
1 bag Minute® Multi-Grain Medley
1 Small package of frozen shrimp
1 clove garlic (minced)
1/2 red onion (chopped)
2 eggs
1 small package of frozen stir-fry vegetables
2 Tablespoons Soy Sauce
3 Tablespoons oil (sesame or vegetable)
Directions:
Cook the Minute® Multi-Grain Medley according to package directions. In large wok or skillet heat 3 Tablespoons of oil to high heat. Fry the Minute® Multi-Grain Medley over high heat for 3-4 minutes, regularly stirring. Add soy sauce, stir. Add chopped garlic and onion, stir. Add frozen vegetables, stir. Stir fry for 3-4 minutes or until vegetables are tender. Stirring regularly. Make a small pool in pan for scrambled eggs. Mix eggs until cooked and add into rice mix. Add shrimp and stir fry for 2-3 minutes. Enjoy!

Picky Eater Buster!
My children are somewhat picky eaters and my attempt at expanding their pallets is sometimes an uphill battle. I have learned that creating dishes around their favorite ingredients makes them more apt to trying new flavors and textures. My oldest son loves, loves, loves shrimp and he at this dish up with absolutely no fuss!
