Bacon + Egg + Avocado & Quaker® Oats
I had you at bacon amiright? Oatmeal doesn’t have to be sweet anymore – make way for the savory breakfast oatmeal my friends. That’s right: combining egg, bacon, cheese and avocado in Quaker® Oats in the aptly titled recipe: Egg, Bacon and Avocado Breakfast Oatmeal recipe is a crazy, delicious savory twist on a breakfast classic that is surprisingly & insanely delicious.
Given the opportunity to bring my very best bowl for the Quaker® Oats Bring Your Best Bowl program I knew that I had to do something extraordinary and that is why I came up with this super protein packed breakfast oatmeal recipe that contains everything I love about breakfast all in one. There is Quaker® Oats, an over easy egg, green scallions, cheese, avocado and bacon all married into one dynamic breakfast recipe for a great start to the day.
Egg, Bacon & Avocado Breakfast Oatmeal Recipe
Ingredients:
1 cup – Quaker® Oats Quick 1-Minute Oatmeal
1/2 Ripe Avocado
1 Egg cooked Over Easy
1 – 1 1/2 strips of cooked Bacon
1/4 cup of Shredded Sharp Cheddar Cheese
Sliced Green Scallions
1/4 teaspoon Cayenne Pepper
Salt to Taste
Fresh cracked Black Pepper to Taste
Directions:
Fry your bacon strips and set aside to cool. Slice avocado and season with cayenne pepper. Slice green scallions and shred your sharp cheddar cheese. Cook Quaker® Oats 1-minute oatmeal according to canister directions (it does literally only take 1 minute). Season Quaker® Oats with salt to taste and put into your bowl. Fry an egg over easy (meaning fry it but leave the yolk runny). Place egg on top of oatmeal, crumble up bacon, place sliced avocado and green scallions on top. Sprinkle fresh cracked black pepper on top.
