There is no doubt that I love the holidays. To me, the holidays mean good friends, good food and plenty of cheer. I love to entertain a home full of good friends – I host a big Christmas party for all of my best mom friends every year. And actually, it doesn’t feel like Christmas until we have our annual party. The kids decorate cookies as us moms eat and catch up on life and everyone leaves well fed and happy. This year, I’m going to be serving something extra delicious and bright – Rich’s SeaPak shrimp spring rolls.
To avoid the stereotypical kid food, I like to find appetizers that are kid friendly but also more refined than pb&j sandwich squares. Because honestly, I eat like a 3 year old every day and having just one day of tasty food is more than welcomed. What is great about these little crispy rolls of delight is that they are super easy to make. Seriously. There is no prep, simply open the box and cook according to the directions. Even I can do that.
The outside of Rich’s SeaPak shrimp spring rolls are super crisp and light. The inside is moist and delicious and the included dipping sauce is a perfect flavor combination. I actually had a hard time taking pictures of the rolls because the kids and I couldn’t stop eating them. When it comes holiday party time, I’m definitely going to have to stock up on several boxes of them to keep everyone happy.
