Race Against The Daylight
Since the daylight hours are shorter during the Winter months, it seems as though I am running a race against the light. As a busy mom just like you, I could use a hand when it comes to creating warm and fulfilling weeknight meals for my family. Thankfully for parents like us there is Walmart and Progresso soup. Where shopping and buying a hearty and delicious meal is made easy. I head to my local Walmart to do the majority of shopping for my family’s needs. Walmart truly is a one-stop-shop!

Progresso Creamy Chicken Noodle soup is a favorite here in the Funny Family household. Its creamy texture is divine and the large chunks of white meat chicken is hearty and delicious. Did you know that Progresso has been crafting honest, soul-satisfying recipes made with real ingredients for over 100 years? That’s a meal aged to perfection in my opinion.
Easy Cucumber Salad
I’m going to let you in on one of my little secrets. To get my kids to try different foods and flavors, I pair the new food item with one of their favorites. That way, they’ll be so busy noshing on their favorite that they’ll be less likely to identify the new flavor. Each of my kids are obsessed, and I mean OBSESSED with cucumbers. I typically serve them plain and they’ll eat them up before I can even finish slicing. In order to get my children open to the idea of dill and garbanzo beans, I whipped up a quick cucumber salad that is a divine pairing. And guess what? They loved it!
Ingredients
1 Cucumber
Fresh Dill
1/4 cup Cherry Tomatoes
1/8 cup of Garbanzo beans
1/8 cup of chopped Fresh Basil
Splash of Red Wine Vinegar
Pinch of Sea Salt
Pinch of Fresh Cracked Black Pepper
Directions
Wash your produce and slice your cucumber at a diagonal. I used a combination of a traditional cucumber and an English cucumber for flavor variety. Slice your cherry tomatoes in half. Add the cucumber, tomato, garbanzo beans and chopped fresh dill into a bowl. Add red wine vinegar, basil salt and pepper and stir. Cover and refrigerate for at least 1 hour before serving. The longer this salad sits, the more the flavors will marry. Enjoy!
The fresh, “herby” taste of this cucumber salad is so bright and pairs so nicely with the creamy heartiness of the Progresso Creamy Chicken Noodle soup. It may be my favorite weeknight meal and I cannot wait to have it again soon!
