Grilled Peanut Butter Chicken Skewer Recipe
While growing up, I had the most amazing extended family. Each of them brought something new and interesting to my life that I still carry with me today. One aunt taught me how to sew, another aunt taught me how to garden and another how to cook. My uncles were amazing as well. Each of my uncles taught me how to have a zest for life and a taste for adventure. One of my favorite uncles passed away a few years ago, however and most thankfully I had the opportunity to spend a few summers visiting him in upstate New York while I was growing up. My uncle was an amazing chef on the barbecue. He had the best recipe for a spicy peanut butter chicken dish that I have never been able to recreate perfectly. In honor of him and with the intention of creating a new comfort food dish, I set out to create a grilled peanut butter chicken skewer recipe. I have to say, it turned out so delectable and tasty that it’s my new fav comfort food.
With four young children of my own I have a collection of recipes that are tried and true and something I know everyone in my family will eat and enjoy. However, these recipes can get overused and tired. I set out to recreate my uncle’s spicy peanut butter dish in a new way that would satisfy my family’s taste buds AND be good for them! My feel-good meals that I enjoy cooking for my family feature local, fresh and premium quality ingredients, produced with no antibiotics ever.
I realize that adding peanut butter to chicken may sound strange, but I assure you it’s seriously wonderful. With the added spices and flavors while grilling on an open flame, the peanut butter becomes a thick and rich savory sauce that’s finger licking good.
Grilled Peanut Butter Chicken Skewers Recipe
Ingredients:
2 Chicken Breasts
Red, Yellow and Green Bell Peppers, chopped
Italian Squash, chopped
Wooden Skewers soaked in water for 1 hour (to prevent burning)
1/2 Cup of Creamy Peanut Butter
1/4 Cup Soy Sauce
1/4 Water
1 1/2 Cloves of Garlic, minced
1/2 Teaspoon Chili Powder
1/2 Teaspoon Ginger
3 Tablespoons Brown Sugar
1/2 Teaspoon Fresh Cracked Pepper
Pinch of Salt
1/2 Fresh Squeezed Orange Juice (you can use a lemon if you wish, I grabbed an orange off the tree)
Fresh Basil
Directions:
Slice the Chicken Breasts into thin 1″ strips. Chop the bell peppers and squash into large chunks. Combine the peanut butter, soy sauce, water, minced garlic, chili powder, ginger, brown sugar, black pepper and salt in a medium sized saucepan. Bring to a simmer while stirring until thoroughly mixed.
The peanut butter sauce should be the consistency that allows for brush basting (slightly less thick than regular peanut butter out of the tub). Allow to cool and separate peanut butter sauce into two bowls. One bowl will be for chicken basting and the other will be for dipping.
Skewer a piece of bell pepper on the skewer, then chicken, then Italian squash until the skewer is full leaving 1″ of open wooden skewer for holding on each end. On a clean, oiled and hot grill place the skewers on the grill. Leave the grill open and cook for 3 minutes, turn, brush with peanut butter sauce and repeat for 10-15 minutes until chicken is cooked through. The more peanut sauce you brush on your chicken skewers the better. Garnish with chopped fresh basil, serve hot. Eat and Enjoy!

I love peanut butter sauce on my chicken. I also use it and toss it into rice noodles with chicken and veggies which is delicious!
