As you already may know, there are four Funny Kids. The two oldest kids are big and strong and healthy, however my youngest is just a wee bit behind in both height and weight. Being the youngest sibling out of four in a family has got to be difficult, it always seems like my youngest is in a rush to keep up with her big brothers and sister. So much so, that she’ll rush through meals like the big kids do even though she didn’t have the opportunity to eat as much – just so that she may play with them! Therefore, this worried momma is always on the hunt to find nutritious snacks and bites that will support her growth and development all while helping teach her healthy eating habits.
SummerTime and the Snackin’ is Easy!
Now that it is officially summer time, I love, love, love having delicious homemade cookies on hand for the kids to snack on. What says 4th of July more than all-Americana oatmeal raisin cookies right? My girls and I had so much fun making these together.
Oatmeal Raisin Cookie Recipe
Ingredients:
3 cups rolled oats
1 1/2 flour
2 Sticks of Unsalted Softened Butter
2 Large Eggs
1 Cup Packed Brown Sugar
1 Teaspoon of Baking Soda
Directions:
Combine the Baking Soda and Flour in a bowl, set aside. Beat the sugar and butter together until creamy, add eggs. Slowly add dry ingredients, mix well. Stir in the Rolled Oats and Raisins (sometimes I’ll put in a pinch of cinnamon & salt for added flavor too). Chill batter in refrigerator for 1 hour.
Bake at 350 degrees for 12 minutes or until golden brown. Serve and enjoy!
