A New Healthy Dinner Recipe Idea
Are you in need of a few new healthy dinner recipe ideas? As a mom of four young children I rely heavily on a cupboard stocked of essentials to create most of my weekly dinners, because let’s face it – you can only serve “breakfast for dinner” so many nights a week before someone starts to complain. I have found that keeping my cupboards stocked for quick meal prep with low sodium canned vegetables can stretch my weekly meals into creative dishes just like this “B.C.T” bacon corn tomato macaroni and cheese recipe that is a twist on a classic dish and packs a healthy punch of veggie vitamins.
This recipe for “B.C.T.” macaroni and cheese is the perfect one-pot-dish that’ll satisfy the hungriest appetites with wonderful bursts of interesting flavors. Also, bacon goes with everything in my opinion and most especially macaroni and cheese. I chose to include gold sweet corn and canned diced tomatoes Italian recipe for a really awesome flavor combination in this dish that you and your fam is just going to love. The golden sweet corn provides little bursts of sweet flavor while the crispy bacon makes this dish savory and delicious. And the cheese? Well, the cheese brings the dang dish together. The best thing about this recipe in particular is that it is relatively healthy!
B.C.T – Bacon, Corn, Tomato Mac and Cheese Recipe
Ingredients:
8 oz Gemelli Pasta – cooked to packaged directions
8 oz Elbow Macaroni Pasta – cooked to packaged directions
16 oz Sharp Cheddar Cheese
1 1/2 cups of Whole Milk
1 can Sweet Golden Corn – drained
1/2 can Diced Tomatoes Italian Recipe – drained
3 pieces of cooked Bacon
1 Tablespoon of Flour
1 stick of butter
Salt and Pepper to taste
Directions:
Cook pasta to package directions, drain and rinse
Fry bacon, let cool
In large pot, melt butter over medium heat
Add flour and stir constantly until mixture becomes golden brown
Add milk slowly and stir over medium/low heat
Cook mixture until a thin gravy consistency (this is your roux)
Add cheese slowly over low heat, stir until melted
Add sweet golden corn, diced tomatoes and bacon
Salt and pepper to taste
Add noodles slowly and stir
Enjoy!
