It’s Too Hot To Cook?
Now that we’re slowly entering into the dog days of summer it’s simply too hot to turn on the oven! Thankfully when it’s too hot to cook in the oven that means delicious meals on the grill. I love turning what is a regular oven-cooked meal into an extraordinary grilled meal. Cooking on the grill provides a smokey flavor that simply can’t be achieved by gas ovens. I recreated my absolutely favorite glazed bacon wrapped pork chop recipe that I found online several months ago to be barbecue recipe. I knew that this recipe would be taken over the top by cooking it on the grill but I didn’t expect it to be so divine.
Grilling is Easy!
Grilling is easy, but it’s done right when you are able to use quality ingredients. For this glazed bacon wrapped bbq pork chop recipe I couldn’t use anything but the best. That’s why I used Smithfield All Natural Pork from Walmart. Smithfield All Natural Fresh Pork is naturally tender and juicy without added steroids, hormones or artificial ingredients. Swinging by Walmart to purchase the ingredients is simple and cooking on the grill for under 30 minutes creates one simply divine and easy meal.
Glazed Bacon Wrapped BBQ Pork Chops
Ingredients:
Smithfield All Natural Bone-in Pork Chops
4 slices of thick cut bacon
Dry Rub:
3 tablespoons dark brown sugar
2 teaspoons kosher salt
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
Glaze:
1/4 cup Apricot Preserves
2 tablespoons Dijon mustard
Directions:
Combine the brown sugar, salt, paprika, and chili powder in a small bowl. Rub all of the mixture into the Smithfield All Natural Bone-in Pork Chops. Wrap the chops with the strips of bacon, securing the ends of the bacon by “tucking” them into the adjacent strip of bacon.
Heat the grill over medium-high heat. Place the bacon-wrapped Smithfield All Natural Bone-in Pork Chops and sear about 6 to 8 minutes on one side. Flip the Smithfield All Natural Bone-in Pork Chops and continue searing until the other side is browned. Flip back and forth one or two more times until thoroughly cooked. Thoroughly coat top of chop with glaze.
* If you love your pork medium rare, you should cook it to an internal temperature of 145 degrees (followed by a three-minute rest). If you like your chops a little more done, you can cook them to an internal temperature of 160 degrees.
