There’s nothing I love more than easy recipes that look fancy. I’m allll about impressing people with as little effort needed as possible. These chicken salad tomato cups are easy and look pretty fancy in my opinion – almost as if they took me hours of time to make. But you know what? They didn’t take much time at all. This easy summer chicken salad recipe from start to finish only takes about 30 minutes.
I make chicken salad pretty regularly on the weekends or before a big holiday meal because it is light and easy. Usually I served it on crunchy corn tostada’s. The combination of the crunchy and salty tostada with the light and creamy chicken salad is superb. This time I made the chicken salad as usual but I served it in hollowed out tomato cups. It was divine.
How To Make Easy Summer Chicken Salad
Ingredients
2 Chicken Breasts
3-4 Roma Tomatoes
2-3 Celery Stalks
1 Onion
1 Cup of Mayonnaise
1/2 Cup of Sour Cream
Salt and Pepper to taste
Large tomatoes for cups or tostada’s for serving
Directions
Boil chicken breasts until done
Shred or chop chicken breasts, put into medium/large bowl
Add sour cream and mayonnaise
Chop celery and onion into bite sized pieces
Dice the tomatoes
Add celery, onion and tomatoes
Stir
Add salt and pepper to taste
To Create Tomato Cups
Cut the tops off of a large tomato
Cut out the tomato insides and gently scoop it out
Using a spoon, put chicken salad inside the hollowed out tomato cup
It’s that easy!
Tips
Start off by adding less mayonnaise and sour cream and add gradually to your liking. I like my chicken salad light and creamy, so I end up using less mayonnaise and more sour cream. To reduce calories you can use “light” versions of both. If you will be serving your summer chicken salad on tostada’s as I mentioned earlier, then you can add less salt. A little more salt is great when serving the easy summer chicken salad in the tomato cups. I also prefer my chicken chopped and not shredded. *Note: I sliced a sliver of tomato off the bottom of each tomato cup so they would stay still for pictures.
You may see those recipes online that look incredible but are impossible to eat. This recipe for easy summer chicken salad in tomato cups are not like that! I simply cut the tomatoes in fourths and used a tostata chip to scoop it up. It was delicious.
