Long gone are the carefree days of the summer vacation. Here at the Funny household, we’re fully immersed in the back to school season. Which, to be quite honest, is a stressful time for me and my family. Attempting to help four unwilling children to get ready and out the door on time every morning has me wanting to crawl back into bed most mornings. When I’m in a rush to create the lunches, I remember the “power of 5”. As long as these 5 items are in the lunch I know my kids will have proper nutrition. 1. Protein 2. Fruit 3. Vegetable 4. Dairy (or equivalent) 5. TREAT! - Make it Fun!

Now that my youngest is in preschool, I really have to up my lunch fun factor game. That is why I created this super simple, yet totally adorable happy face sandwich! The entire process took less than 5 minutes to finish, yet I know that my daughter will squeal with delight when she opens her lunch to find such a fun surprise awaiting her. I simply made the ham and cheese sandwich and then used a biscuit cutter to cut it into a circle. Then I used cookies for the eyes, spare cheese bits for the mouth and nose and surrounded by pre sliced apples. I used muffin cups to hold the fruit and veggies in and waahla! A fantastic preschool lunch was created!
