It’s A Celebration…kinda
Let’s celebrate – it’s officially back to school season! No more listening to kids fighting, arguing or exclamations of being bored (if I hear “moooommmm…i’m booorrrrrrreeeedddddd” one more time I just *might* run away). My own kids start school back up again in just a few weeks and we AS A WHOLE DANG FAMILY are all looking forward to it. However, I have to be honest and admit that one of the biggest mom anxieties…is creating school lunches. The ginormous task of creating healthy lunches that are interesting enough for my kids to actually eat is quite a task. I learned that having a large variety of school lunch items on stock as well as coming up with fun new recipe twists on classic lunch foods was the key to making school lunches interesting….(but let’s be honest, sometimes letting them just buy the school lunch works too).
My oldest daughter decided at the beginning of the last school year that she no longer liked sandwiches. She no longer likes sandwiches?! What??!?? I had no idea how to overcome that obstacle until I frantically searched Pinterest and blogs and decided that the best route for a picky school lunch eater was Bento boxes. So I ordered one for her online and, thankfully, it changed my mom anxiety life. No longer was full sandwiches coming home uneaten, now thanks to her new Bento box she was eating every last bite in her lunch. I created these insanely easy “sandwich” rolls on a whim one day and I’m excited to share them with you.
Sandwich Rolls “Recipe”
I almost feel silly calling this a recipe because it’s just so easy to make. You can pick up all of the required ingredients at your local grocery store.
Ingredients:
Your kids favorite deli meat – I used a combination of ham and salami
A few romaine lettuce leaves
1 slice low fat provolone cheese
1 small flour tortilla
1/2 teaspoon of light mayonnaise
Directions:
Spread a thin amount of mayonnaise over the entire area of tortilla, it’ll serve as your binder. Then place the cheese and two thin layers of your favorite deli meat. Place a layer of romaine lettuce. Roll the tortilla into a tight roll. Use a very sharp knife to cut 3/4 inch rolls. Place the rolls into your bento box. It’s so easy and so delicious your kids friends will be jealous!
Bento Box School Lunches For The Win
The Bento Boxes that we own have 6 labeled compartments to make creating school lunches even easier. There is a compartment for vegetables, dairy, whole grains, fruit and protein and another small compartment that I use for a sweet treat.
For this particular Bento Box lunch I provided my 6 year old daughter a combination of her favorites it is an all-around hearty and healthy lunch!
