Don’t Turn On The Oven!
The spring season has officially sprung and right behind it are the long days of summer. The spring season is my all time favorite season to cook. It’s during this time that I feel the most creative in the kitchen, creating new recipes and revamping old ones. However, during the loooong and hot summer days I opt to never turn on my oven. Adding to the scorching heat of the house just to cook a meal is never a good idea in my opinion. Therefore, when I’m creating new dishes in the spring season I always try and come up with a few no-oven options for the hot summer days. This basil, garlic, tomato and shrimp angel hair pasta dish is just that. Delicious, nutritious and so, so easy.
When it comes time to create new pasta dishes, I learned a long time ago that not all pasta is the same. Barilla ProteinPLUS pasta is a good source of lean protein from a simple blend of egg whites, grains, lentils and chickpeas. So not only am I creating the best version of a pasta dish that I can, the pasta itself provides a good source of fiber and ALA Omega-3 with a delicious taste and texture that even my picky kids love. Basil, Garlic, Tomato and Shrimp Angel Hair Pasta
Ingredients:
Barilla ProteinPLUS Angel Hair
Cherry Tomatos, halved
1 clove of garlic, minced
2 Tablespoons of Olive Oil
4-5 fresh leaves of Basil, chiffonade
Shrimp, cooked
Directions:
Cook Barilla ProteinPLUS Angel Hair according to package directions. I cooked it for exactly 6 minutes to al dente perfection. While you’re waiting for your water to boil, add 1 tablespoon of olive oil to a pan. Add minced garlic and cook for 1-2 minutes. Add tomatoes and allow to blister. Add the chiffonade basil (roll basil leaves together and slice, it’s very easy!), and shrimp. Saute for 2 minutes. Once the Barilla ProteinPlus Angel Hair pasta is done cooking, drain (do not rinse) and add the pasta back to the saucepan. Add the sauteed sauce. Toss Barilla ProteinPlus Angel Hair, tomatoes, shrimp, basil and garlic. Add 1 more tablespoon of olive oil if needed. Done!

The trick to make this recipe super fast is to saute your herbs and vegetables while waiting for the water to boil for the pasta. In the time it took between waiting for the water to boil and cooking the Barilla ProteinPlus pasta to perfection, I even steamed some asparagus spears (my fav vegetable!!).
