Just like millions of homes across the country, mornings are hectic around here. Between making lunches, finding lost shoes and a decent outfit that the kids will actually agree to wear (which seems like the hardest task!), I hardly have time to create an actual homemade breakfast. To top it all off, my four children are incredibly different from one another. What one child likes, the others do not. Quite honestly, a lot of times I feel like a short order cook in the kitchen trying to prepare meals for each of them (that doesn’t happen too often, don’t worry). But if there’s one thing all of my kids can agree on, it’s pancakes. Pancakes are the magical equalizer in our household. However, I’m all about sneaking in extra nutrients with new and different flavor combinations whenever possible into my kids favorite dishes. Therefore I always pop in fresh fruit into my pancake mix to shake it up and give my kids an extra dose of fruit in the mornings. Banana Pancakes
Ingredients
I 1/2 Cups of Flour
1 Teaspoon of Salt
1/2 Teaspoon of Sugar
1/2 Teaspoon Vanilla Extract
1 Egg
3 Teaspoons of Baking Powder
1 to 1 1/2 Cup of Milk
1 Banana (sliced)
Directions
Mix all of the dry ingredients into a large bowl. Add egg and vanilla extract and stir, add milk and stir until the pancake mix is the right consistency (I like a gravy consistency). Add sliced bananas and cook on greased griddle pan until pancake bubbles, then flip. Enjoy!
