Good Morning
Now that school is full-blown back in session, like parents everywhere – I just don’t have the time to lavish my kids with a down home cooked meal in the mornings. But the weekends? The weekends are for pulling all the stops and showing my family just how much I care about them by cooking up a breakfast feast fit for a king.
One of my favorite things to do in the kitchen is to add small little kicks to already favorite recipes. Thereby making the classics new again and adding to our food flavor profiles (that’s fancy talk for making things taste different every now and again). I love cooking country potatoes, it’s one of our family favorite weekend breakfast. I typically make country potatoes with potatoes, onion and bell peppers. Already hearty and delicious, to change it up I added Jalapeños, a fried egg and bacon. Allow me to brag for a moment because oh mah gah…so good!
When I’m in need of restocking the kitchen cupboards I always head into my local Northgate . They always seem to have the largest selection and exactly what I’m looking for.
Bacon, Egg, Jalapeno Country Potatoes

Ingredients
Whole Jalapeños 28oz – diced
5-6 Yukon Gold Potatoes – diced into 1/2 squares
3-4 Strips of Bacon
1 White Onion – diced
1 Egg
Vegetable Oil
Salt & Pepper to taste
Directions
The majority of this recipe is preparation. Cutting and dicing will take you the most time, I like to have all of my ingredients prepped to make the cook time easier. Wash and dry your Yukon Gold Potatoes, leaving the skin on (since that’s where all your good fiber is at) cut the potatoes in half and boil until slightly soft. Boil the potatoes for approximately 7-9 minutes. Remove the potatoes from the water and allow to cool. While the potatoes are cooling, fry your bacon, dice your onion and Jalapeños. If you’d like an extra spicy dish, add more Jalapeños. I used 1 entire Jalapeño for this dish and it was the perfect amount of spice. Add 1 Tablespoon of Vegetable Oil to a frying pan, cook your onion until soft. Add the Jalapeño, cook together for 1 minute. Remove from heat. In a large frying pan add 1/8 cup of Vegetable Oil on medium-high heat. By now your potatoes will be cool enough to handle. Dice your potatoes into good sized cubes. Add to hot oil and fry. Once your potatoes are fried enough to your liking (keep an eye on them so they don’t burn) add your onion, bacon and Jalapeño. Stir. Season with salt and pepper and cheese to your liking. Fry and egg and add to the top of your dish. Serve hot. Enjoy!
