This year I will have an almost 8 year old big kid 2nd grader for a son. That means a few things…like big kid homework, big kid grass stains on the knees of all his expensive jeans and above all else: a big kid appetite after school. His big kid appetite requires serious preparation on my part for after school snack attack survival. Big kids after school are tired, hot and always hungry. My big kid is so hungry in fact that if I don’t have a hearty rib-sticking nutritious meal for him that is ready to eat by the time he walks in the door then he will eat almost every little thing he can get his grubby little hands on out of the cupboards and refrigerator. Literally. To control his hearty appetite and to make #FoodMadeSimple I keep Hot Pockets and Stouffers Mac & Cheese on hand that is ready to easily heat and eat. They are mom lifesavers.

Hot Pockets are a great hearty snack for a hungry kid (or a hungry mom, lets be honest). We always have a package or two in the freezer for big kid appetites after school. Walmart sells Hot Pockets in super convenient 12 packs so you’re almost guaranteed 2 weeks of after school snacks, which is awesome.

When I was in college I practically lived off of Stouffers Macaroni and Cheese. I’m not kidding. I love, love, love the thick macaroni noodles and creamy homemade cheese sauce. Now you can get Stouffer’s Mac Cups in a 2 pack that are super easy after school fuel options that are rib-sticking and delicious. My freezer is full of the Mac Cups now (I’m not kidding!), they are faster to cook than their larger counterparts and are just as delicious. You can find them in the freezer aisle next to the Stouffers single serve entree’s at your local Walmart.

  • Keep a variety of snacking vegetables in stock
    Snacking vegetables like carrot sticks or celery sticks with peanut butter are healthy and hearty
