Perfect summer recipe
It’s too hot out during the summer to turn on the oven therefore I become the queen of the barbecue. I fire up the ol’ grill several times a week to create a yummy, quick and easy meal for my family. Once upon a time my husband was the grill king, but I have taken over the grill reign (because I’m better at grilling than he is!).
Once I got over my initial intimidation fear of the barbecue, I realized that barbecues really aren’t all that scary. And besides, grilling up lean chicken is an easy way to create tasty, healthy meals for my family.
I have created several grilled chicken recipes but this Easy Chicken Skewers recipes is by far my fav. The best thing about this recipe is that it only requires 3 easy ingredients!
- 4 Chicken Breasts
- KC Masterpiece Barbecue Sauce
- Vegetables of your choice – Such as onions and bell peppers
- Soak the bamboo skewers sticks in water for 20 minutes
- Cut the raw chicken into large (but uniform) chunks
- Quarter the onion and cut into large pieces
- Cut bell peppers, remove seeds and cut into large chunks
- Skewer one piece of bell pepper, then chicken, then onion, then bell pepper, then chicken, then onion, then bell pepper and so on
- Be sure to skewer the vegetable or chicken right in the thickest middle part
- Season with your favorite seasoning. I like fresh cracked pepper, santa maria seasoning and garlic seasoning.
- Grill
- Be sure to rotate the skewer frequently
- Apply KC Masterpiece Barbecue sauce liberally in the last 5-10 minutes of grilling
- Eat and Enjoy!
Step-by-Step Instructions
This recipe is very easy. So easy that there is virtually no way to mess it up. You can use any kind of vegetable of your choosing. I prefer to keep it simple and use onion and bell pepper, but you can use anything!
Cut the raw chicken into large chunks
Cut bell peppers in half, remove seeds and cut into large chunks.
Cut onions into quarters and then into large chunks.
Skewer one bell pepper, then chicken chunk, then onion, then bell pepper, then chicken, then onion and so on until the skewer is full. Leaving approximately 1/2 inch open on each end for handling.
Grill. Be sure to rotate frequently.
During last 5-10 minutes of grilling apply KC Masterpiece barbecue sauce liberally.
These chicken skewers are healthy and delicious. They are possibly my favorite recipe right now! As I mentioned before you can’t mess this recipe up. You can add any type of meat and any type of vegetable with KC Masterpiece Barbecue Sauce for the perfect summer recipe!
